Baked Egg "Surprises"

In our humble opinion, baked eggs do not get nearly enough recognition.

They are incredibly quick, easy and fuss-free to get them onto the kitchen table in the morning, and there are dozens of different "surprises" that you can put into the bottom of the ramekins. This can be anything you fancy - think mushrooms, cheese, spinach or kale (as pictured here), bacon, onions, fried could probably even do baked beans if you wanted to!

Here's how Sam makes them:

  1. Preheat your oven to 200c
  2. Lightly oil or butter a ramekin dish
  3. Add a layer of your chosen surprise, making sure you season it with sea salt, pepper and/or fresh herbs - chopped spinach/kale doesn't need to be pre-cooked as it'll wilt in the oven. Potatoes, onions, mushrooms and bacon should be quickly cooked beforehand. For cheese, I normally just cut it into small dice so that it melts easily and evenly.
  4. Squash the filling down a little and then break an egg (or two if they fit!) over the top.
  5. Sprinkle a little sea salt and pepper over the top. I sometimes grate some cheese over the top too, if I'm feeling naughty.
  6. Pop in the oven for 8-10 minutes until you can see that the white has set. If you get it right, the yolk will still be gooey. If not, you'll just have to try again another day!!
