Possibly one of my favourite breakfasts is Bircher Muesli which contains delicious nutritious oats, nuts and fresh fruit. It was developed around 1900 by Maximillian Bircher-Brenner for his patients and its still a very popular breakfast across Switzerland and Germany today. So, here is goes, often better prepped the night before so you can give the oats a good soak through alternatively, if you are using quick oats, this can be achieved in 30-60 min. Its absolutely delicious.
Serves 4-6. You can adjust accordingly.
2 Cups/ 1500g rolled or quick oats
1 3/4 cups/ 420ml Milk
1/4 cup / 60ml apple juice
3 Tablespoons of lemon juice
1 apple, cored and grated with the peel
1-2 tablespoons of honey
1 1/2 cups / 375g of plain yogurt
A dash of cinnamon (optional)
Toppings: Your favourite fresh and/or dried fruit, nuts etc
My favourite would be blueberries, raspberries, raisins and hazelnuts
Combine the oats, milk, apple juice and lemon juice into a bowl and let is all soak in over night in the fridge. In the morning, add the grated apple, honey (to taste) yogurt, and cinnamon (optional) and mix well. Serve up and top with your favourite fruit and nuts.
